30 Minute Meatloaves

What's the trick to making homemade meatloaf in just 30 minutes? Muffin tins!

All of the meatloaf with much less of the wait (and mess!)

These individually sized meatloaves are served with a side of roasted cauliflower.

30 Minute Meatloaves


Ingredients

  • One (1) pound of ground beef (95% lean is best)

  • One (1) pound of ground pork

  • One (1) small finely diced onion

  • Three (3) cloves of garlic

  • 1/2 cup of breadcrumbs

  • Two (2) teaspoons of Italian seasoning

  • Two (2) tablespoons of dijon mustard

  • One (1) Tablespoon of Worcestershire sauce

  • Two (2) eggs

  • One (1) tablespoon of fresh parsley

  • 1/2 cup ketchup

  • One (1) tablespoon of Worcestershire sauce

  • One head of cauliflower, sliced

  • Three (3) tablespoons of olive oil

  • Salt, pepper and Italian seasoning to taste

Directions

Pan: A 12 count muffin tin, and a baking sheet

  1. Preheat oven to 375°F and line all 12 muffin tins, if desired. (the meatloaf won't stick to the tins too much, but silicone cup liners will make cleanup much easier.)

  2. Combine all the meatloaf ingredients in a mixing bowl until just evenly mixed. (Don't over-squish the mixture or the loafs will come out dense and possibly undercooked in the center.)

  3. Fill the muffin tins with the mixture. The mixture will not expand, so feel free to heap them high!

  4. Slice the cauliflower head into 1/4 inch thick slices, drizzle with the olive oil, and sprinkle with salt and pepper and Italian seasoning to taste.

  5. Bake both the individual meatloaves and the cauliflower for 20 minutes. While baking, stir together the ketchup and Worcestershire sauce to make the glaze.

  6. After 20 minutes, flip the cauliflower and glaze the individual loaves with the glaze mix. Return both to the oven for 5-8 minutes, or until the meatloaves are just cooked through.

  7. Serve both the 30 minute meatloaves and the cauliflower while hot, topping both with additional fresh parsley if desired.
